Fresh Apple Cake

Fall is apple harvest time! This recipe pairs apple cake with caramel frosting for a delicious fall treat.

Ingredients
  

  • 3 eggs
  • 1 ½ cups oil
  • 2 cups sugar
  • 3 cups flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 cups chopped apples
  • 1 cup nuts
  • 1 tsp. vanilla
  • 1 tsp. cinnamon

Caramel Frosting

  • 1 stick butter, melted
  • 1 cup brown sugar
  • ¼ cup milk
  • 2 cups powdered sugar

Instructions
 

  • Beat together eggs, oil and sugar.
  • In a separate bowl, sift together flour, salt, and soda.
  • Add the flour mixture to the egg mixture and stir well. (batter will be stiff - almost like cookie dough)
  • Add chopped appes, nuts, vanilla, and cinnamon.
  • Bake in a greased and floured 9 x 13-inch pan at 350° for 1 hour

Caramel Frosting Instructions

  • In a medium saucepan, mix melted butter, brown sugar, and milk.
  • Bring to boil.
  • Cook 2 minutes, stirring constantly.
  • Set aside to cool for 30 minutes.
  • Add powdered sugar and mix well.
